I remember seeing on Hack a Day something about the Pico as a logic analyser. The project had a nice write up on the protocol used for these devices and there is support now in Sigrok source.I think I said it's a shame the Debug Probe doesn't breakout unused pins to allow it to be used as a maker platform for other things but I guess Raspberry Pi prefer product specific boards. There's a couple of 'J4' pins which can be repurposed but I recall no access to ADC.
Though the GPIO is limited, I haven't connected more than four signals to my logic analyser at a time in years.
I keep thinking about creating an 8 channel logic analyser but haven't had the time to sit down and figure out a DMA ring buffer and handling pre-trigger capturing.
I've modified the code to see if it will work with redefined pins. I'm thinking I should test with a pico first to make sure it doesn't drive pins it shouldn't I wouldn't want to fry the RP2040 on the debug board.
