Very few image sensors work in that way, with anything more than a line buffer or two on the sensor being unusual. The exception is going to be some of the low resolution SPI cameras - Arducam sell a couple https://docs.arducam.com/Arduino-SPI-ca ... PI-Camera/
Most recent image sensors also produce Bayer data at 8, 10, 12, or 14bit resolution. Producing YUV or RGB requires a fair amount of processing.
Which colour domain are you thinking you want 16bit data, and is that 16bit per component (very unusual), or 16bits per pixel?
