I would recommend plugging the Pico into a Windows or Linux PC to see if they are recognised on those. That will help identify if there is an issue with the Pico or cable, or if it's an issue with the Mac.
AIUI the 2020 M1 MacBook Air has two Thunderbolt/USB4 ports so perhaps those have specific requirements which a traditional USB-A to micro-USB cable connection does not. I don't know, have never used one.
