Ubuntu refers to its partitions by disk label, so you can't have 2 installations installed at the same time otherwise it gets confused.
It could be booting from the nvme correctly, but loading the rootfs from the sd card because it is the first instance of the "writable" disk label" that it finds.
When you remove the sd card it finds the "writable" label on the nvme, so it loads the rootfs from there.
