Side question. Does anyone sell even a marginally longer PCIe cable? These 30mm cables are a major pain to connect when you have the needed stand-offs so Hat clears the cooler. A 40mm would be great.

Side question 2 - I want to have a discrete On/Off switch for each Pi. The button on the Pi itself will be inaccessible. I have bought a couple of different style switches but you know, once you start buying off of Amazon the quality of what you are buying becomes a total crap shoot. Any recommended On/Off switches?
You can add a push button of your choice across the header point provided for the purpose. Buy your switches from a reputable supplier, either one of the authorised Pi resellers or a major supplier like RS or Farnell, or their subsidiaries in your country.
This will sound off the wall but can these Pi official powers supplies communicate with the Pi or flip-flop can the Pi 5 communicate with the power supply to limit current flow?
Is it a USB-PD supply? If not, there is no communication and the Pi will limit USB downstream current to 600mA (which may or may not matter).
If it is USB-PD, then does it have a 5V 5A mode? If not, you will still only get 3A (and the supply should not allow any more).
You can configure the Pi to allow more than 600mA to downstream USB if you are sure that the supply can provide 5A.
Note that the genuine official Pi5 PSU is a 27W USB-PD model with a 5V 5A mode. Canakit have previously offered their own-brand alternatives, most recent I heard was that the Pi4 ones were of good quality, but there were problems in the past, IIRC. I have not seen any reports (either way) about a Canakit Pi5 PSU.
