In terms of protocol, you can roll your own, or fit in with the protocol used by the devices you have chosen on your network, or use something like MODBUS.
The important thing to remember is that only two devices can use the network at any time, one receiving, and one transmitting. The tricky part of the protocol is coordinating that, unless you have a single master and each slave only speaks when spoken to.
