I don’t have experience with VNC, but this might help solve the issue:
Run the command sudo raspi-config , then go to Display Options > VNC Resolution and choose a resolution like 1920x1080. You can also try System Options > Boot / Auto Login to ensure it starts on the desktop.

I don't have a Micro HDMI converter, I have to do headless installation. I tried the resolution setting you mentioned but it still remained on the black screen at 1024x768 resolution.

I actually wanted to install Ubuntu but I think Raspberry Pi OS is more optimized. And Ubuntu does not support the headless installation. Not good for me. I like the GNOME UI.
