I would use my money for something with a battery. Actually power supply / energy is more important when mobile than the 'brand of computing', but that is another story.
As already said, depending on the sort of engine, the voltage in the car might drop below 6V or lower so a standard DC-DC convertor cannot make a reliable 5V output. I used an extra old 12V car battery in the past when there was no Pi (AMD E-350 board). I did not put a diode between the car 12V and the separate battery, but that would be needed.

Nowadays, my typical use-case is prepare and start the PC/Pi at home and leave it running all the way from starting the engine, going on the road and coming back home. Like a smartphone. You might not even need the power-bank plugged in depending on how long the trip takes. It is a bit like re-inventing the smartphone/tablet/laptop.

In order to stay below a certain limit (e.g. 3A) you might tweak clocking of the Pi5, so at least the CPU cores won't drain the battery that easy. Due to some driver issues with a Pi4, I saw that that works (max 600MHz). So it is the same story as usual, you don't need 5A if you take care of how much power you draw.

Those work OK for Pi3B+ and Pi4B I can say.
