Oh when checking your post again you mention it is even working after reflashing and the web page still connects to it over BLE so no need to recover over UART. So I guess it is only about learning a bit more about how stuff works.
I was confused by your statement 'So, both old and new sensors are now bricked and useless.' which is likely false if the web page can still conect to it. It is probably just your gatttool command that needs fixing.
