There have been reports of Pi 5s being sold by non-approved dealers that have been upgraded from 2GB to 8GB by replacing the memory chip. This upgrade confuses the firmware as it expects to see 2GB of RAM.
The older bootloader firmware supplied with those upgraded Pi 5s didn't check the RAM size, so the Pi appeared to run normally.
It may be possible that you got one of the "upgraded" Pi 5s.
If you try installing an older bootloader it may still work.
