At power input of 1A at 5v, you *can* run with a single PSU. Max output current (with the official PSU) is 1.6A for a Pi5, so there's enough for the monitor, keyboard and mouse with a single power connection. And--FYI--that's exactly the configuration the RPF/RPL was running at the Vallejo Maker Faire last October. It just wasn't with their own monitors (though they might have been using a model theirs is based on).I can see a 15.6" HDMI / 1920x1080 60Hz IPS portable monitor with twin speakers on Amazon right now for £99 (Arzopa).
A Pi one would need a USP to make it stand out and not be just another option. Some kind of innovative close integration with other Raspberry Pi products might be one such USP. One that allows a single power source for example, to do away with the need for two power supplies and cables. A hinged joint to create a clamshell package with a Pi500 would also be nice.
Given the VESA mount the monitor has, it would certainly be possible to design a clamshell package that would contain a Pi400/Pi500 and a monitor. Might be a bit tricky to make sure there's room for your choice of pointing device.
