This is an acknowledged bug with Ubuntu 24.04. See the report at https://bugs.launchpad.net/ubuntu/+sour ... ug/2064208
The following worked for me: Flash the external drive (I was using a MicroSD card) using Raspberry Pi Imager, then edit two lines in the config.txt as described in the bug report (link above). Then save the file, eject the SD, and boot the RPi5. Follow the on-screen instructions for the Desktop version, and you'll be all set.
Note: The "slide show" during the install process (that tells you how cool Ubuntu is) will be heavily distorted. But it comes out the other side, and the resulting installation seems to work great.
